Winter Warmer: Butternut Squash & Ginger Soup

This soup is super simple but packed with flavour and all the stuff that's good for your immune system, such as vitamins C and A, fibre for a healthy gut, red lentils for protein, as well as garlic, cayenne & turmeric. You can of course use all that pumpkin flesh you are are about to generate from carving Hallowe'en lanterns.. if indeed you are. Either way, this is one seasonal delight - great for picnic in the woods or just a lovely simple lunch.
