Simple Lunchtime Laksa

This is merely a variation on my usual lunchtime broth.. it just seems a bit more exotic and special because of the coconut milk! As always, add any veggies you have that need using up, as well as tempeh or tofu if you're female hormones are giving you jip!


Serves 1!


You will need:


1 stock cube

1 clove of garlic, sliced

1 cm of ginger, thinly sliced

1/2 red chilli, thinly sliced

1/2 a nest of egg noodles

2 handfuls of mixed veg (cauliflower, broccoli, green beans, mushrooms slices etc)

1/3 can coconut milk

1 dash of fish sauce

1 splash of sesame oil

1 glug of soy sauce


Bring a pan of water to the boil and add the garlic, ginger and 1/2 of the fresh chilli. Simmer for a few minutes, before adding the egg noodles. After 3 m minutes, add the broccoli and cauliflower if using, then the green beans and mushrooms. Finely add the coconut milk to desired consistency. Finish with the soy, sesame and fish sauce. Serve with fresh coriander and more red chili. xx
