Winter Slaw


This is a Winer salad that teams up well with everything - leftovers, cold cuts, a hearty stew or soup. The rich colours are evidence of the vitamins, phytonutrients and fibre contained within - feel free to add pomegranate seeds, fennel, chicory, torn up kale leaves, or anything else suitable Wintery and crunchy.


Ingredients:


1/3 of a red cabbage, shredded

1/2 red pepper, thinly sliced

1 medium beetroot, spiralised or grated

2 tbsps of toasted seeds

1 tbsp of crushed walnuts

olive oil and lemon juice, or any other dressing, to finish


Method:


Simply combien all ht indrtegients in one bow and enjoy. Make any dressing separately though , so that the salad will keep in the fridge for about 4 days.
