Ingredients - serves 1 1/3 red pepper

1/2 small onion, diced

small clove of garlic, finely sliced

1/3 tin of tomatoes or 1 medium fresh one pinch each of ground cumin, salt & chili powder

olive oil

1 egg

sourdough toast

sprinkle of fresh parsley if available Method Gently heat a little olive oil in a small frying pan & add the onion, garlic & pepper & stir. After a few mins add the tomatoes & dry spices. Cook for about 8 mins until the veg has broken down then make a hole in the middle & crack in the egg. Turn down the heat a little, put a lid on the pan & simmer until the egg is cooked.

Sprinkle with parsley & serve with sour dough toast.

This is traditional Middle Eastern breakfast - perfect for after a morning workout. Full of anti-oxidants & protein to set you up for the day.
