Masala Omelette

A delicious version of a regular omelette - this is perfect wrapped up in a warm flatbread and makes a great on the go breakfast or lunch.

Ingredients - serves 1


1 egg, beaten

1 large pinch each of chilli powder, turmeric, cumin powder, coriander powder, salt, black pepper & garam masala

1 spring onion, finely sliced

a little fresh chilli, if you like

a few snipped chives

1 flatbread, warmed

Method:


Whisk together all the ingredients in a jug or bowl. Heat a small frying pan and add a drop of oil. When it's quite hot, add the egg mixture and allow it to get a little crispy on the bottom. Flip over and cook on the other side for a couple of minutes but no more. Tear off a square of foil if you are planning to 'take away' and lay the flat bread on top. Remove the omelette from the pan and place on the flatbread. Add any sauce such as a drop of chilli, or a little fresh chilli finely sliced and roll up. Great for a little picnic too.
