Ingredients 1 egg per person * 2 tbsp chopped mixed veg / person: onion/peppers/peas/asparagus/mushroom/baby spinach etc * pinch of chilli flakes/small amount of fresh * 1 tsp fresh chives, snipped * splash of milk *
Method Chop the veggies into bite sized pieces. Whisk the egg(s) in a mug, season & add a splash of milk. Gently heat some olive oil or butter in a frying pan and sauté the veggies until soft. Add the chilli & chives. Then spread the mixture across the pan, leaving little gaps. Add the egg into the spaces. Cook gently, stirring a little to make sure the egg cooks well. Serve piping hot!
This is a great way to get the use up left over veg & get some brain boosting protein to set you up for the day. Top with more fresh chili, crumbled feta or slices of avocado ;-)
