A really simple idea - serves 2 for a snack, or 1 for lunch
Ingredients: 1 medium avocado
1 palm sized piece of smoked salmon, snipped into small pieces
4 cherry tomatoes, chopped
1 tsp toasted mixed seeds
1 large squeeze lemon or lime juice
pinch of black pepper Method Cut the avocados in half then carefully remove the stone & scoop the flesh out into a small bowl. Reserve the shells.
Lightly mash the avocado flesh & season with pepper & lemon juice. Add the tomato, salmon pieces & toasted seeds, then spoon the mixture back into each avocado shell & serve with with a seeded cracker or 2 & another squirt of lemon juice. Delicious!
Tweak the ingredients to suit your tastes - a drop of Tabasco sauce or lime juice gives it nice twist, or add in some crumbled tofu for a protein rice vegan version.
