Autumn Apple Compote with Chia Pudding & Yoghurt

It's Autumn & it's time to make a spiced apple compote. Delicious for breakfast with yoghurt & walnuts, it's also fantastic with Chia Pudding, a simple & nutritious way to consume gut healthy, high protein, omega 3 rich chia seeds. Use up apples (or pears) that have lost their crunch for this recipe - adding only cinnamon and spash of water - then gently cook them down. This is a nourishing, hydrating, blood-sugar balancing breakfast that is kind to the gut. It's also delicious!

For the Apple Compote:

4 or 5 apples, skin on, cores removed & roughly chopped

1/2 tsp cinnamon powder

2 cloves (optional)

1 tbsp of raisins

1 mug of water

Method:

Combine all the ingredients in a pan and cook gently over a low heat until the fibre of the apples has broken down, about 20 mins. Stir regularly and add more water if needs be. Cover and leave overnight.

For the Chia Pudding:

combine 3 tablespoons of chia seeds with about 400 ml of milk - dairy or plant milk of your choice - in tupperwate bowl for which you have a lid. Add 1/3 tsp of cinnamon & mix. Refridgerate over night. In the morning, take it out and give it a good stir.

For breakfast: warm the apple compote up on the stove. Add a quantity of the Chia Pudding to a bowl, then add the warmed apple with a dollop of full fat yoghut & a small scoop of mixed seeds and nuts (pumpkin seeds, sunfower seeds, walnuts, almonds etc). Add a small drizzle of honey to taste. It's delicious!
