Nutty Seedy Yummy Energy Balls


Need a little sweet pick me up in the afternoon? Swerve the chocolate digestives with these magic little energy balls. A bit messy to make, but scrumptious none the less.. and you can tweak the ingredients to suit yourself.

You will need:

350g mixed nuts, seeds and rolled oats

100g dates, chopped up

100g dried coconut – desiccated or shredded

50g dried cranberries

100g raw coaco nibs, or powder

½ tsp cinnamon

½ tsp ground ginger

70g melted coconut oil

1 ½ tbsps. Maple syrup

Whizz the whole lot up in batches in a high speed blender or bullet then mould into little balls with your hands. Roll in more coconut if you like.

Should make 20 – 25. Try to eat only one at a time!
