Sweet Potato, Ginger & Lentil Stew

Ingredients - serves 2

700g sweet potatoes peeled & cubed

1 onion, diced

1 tbps coconut oil

1/2 tsp each of chili flakes, coriander, cumin, turmeric

4 tsps freshly minced ginger

4 garlic cloves crushed

1/2 cup brown lentils, washed

4 cups of hot veg stock

1 can full fat coconut milk

4 cups of shredded fresh kale or spinach

fresh coriander & lime wedges to serve

Method

Get all of your ingredients together, then..


1. Sautee the onions in the coconut oil for few mins before adding the chilli, coriander, cumin, chili & turmeric

2. after 1 minute add the ginger & garlic

3. after 2 mins add the sweet potatoes & stir

4. then add the lentils & stir

5. season, add the stock, half cover & simmer for 30 mins

6. remove from the heat & gently add all of the coconut milk & the shredded greens

7. bring back to a simmer, test the seasoning serve piping hot with lime & fresh coriander *
