Rainbow Winter Salad: Kale, Pomegranate & Red Cabbage
Good for all your body systems - immune, digestive, lymph and fab for cleansing the liver too, this incredibly simple combination will last in the fridge for a week.
Thinly shred 1/4 of a medium red cabbage. Tear and scrunch up 4 handfuls of fresh curly kale so that it starts to break down, having removed the leaves and discarded the stems. Mix with 3 tablespoons of fresh pomegranate seeds and sprinkle with 2 tablespoons of toasted mixed seeds (pumpkin, sesame, flax, chia, sunflower). Dress with extra virgin olive oil, lemon juice and a little balsamic vinegar, a sprinkling of sea salt and black pepper. Goes with literally anything.
