Israeli Mnazeleh.. spicy aubergine stew..
Mnazeleh (min- ah-za-lah) In discussion with a client who is half Iranian, I became obsessed with finding the ultimate Middle Eastern aubergine, chickpea and tomato dish, to eat with a warm flat bread and a feta salad. None of my books came up with the thing I craved but I found this recipe by Tori Avey (www.toriavey.com) - an Israeli Mnazeleh so wholesome and delicious you could cry. Amazingly Simple Chickpea, Chorizo and Haddock Stew
Amazing Chick Pea, Chorizo and Cod Stew This is so quick & easy – just tomatoes, chickpeas and fish in fact.. with some clever pimento/garlic/paprika seasoning. So low GL, so nutritious, so flippin delicious…Feeds 2-3 hungry people. **Note to grand/parents: buy extra fish and make fresh kids fish fingers first ;-) You will need: 1 small onion - chopped up 100g of cooking choizo, chopped 200- 300g of fresh white fish – cod, haddock or pollock 1 can or carton of tinned tomatoes
