Spicy Salmon Traybake with Sag Aloo


This recipe is 100% stolen from Esther Clark on the BBC Good Food website.. but it's soooo good I've just got to share it. I hope she doesn't mind!

Ingredients:


1 Salmon fillet or steak per person * 1 medium potato or 4 new potatoes per person * 2 handfuls baby spinach per person * 1 jar of Tikka Masala paste * single cream * 1/2 tsp cumin powder * 1/2 turmeric powder * 1/2 tsp chili powder * Lemon wedges to serve *

Method Heat your oven to 200 degrees * Wash & chop the potatoes into 2 cm pieces * Boil in salted water for 6 minutes then drain, add to a roasting pan & toss in the dry spices with some oil * Place in the oven and roast for 20 minutes * Meanwhile, rub the salmon with some of the Tikka paste & set aside * Boil the kettle & using a colander, wilt the spinach by carefully pouring boiling water over it * Carefully remove the roasting pan from the oven & mix the spinach in * Place the marinated salmon on top & return to the oven for another 20 minutes or so * When it's time to serve, remove the salmon gently from the top and drizzle the cream over the vegetables * Gently mix and serve with the salmon on top and a wedge of lemon for extra flavour *

Salmon is a great source of minerals, protein & healthy fats - choose Organic if you can! When food is this delicious, you don't need large portions or heavy carbs!
